Kulfi is a frozen dessert made out of milk having its roots of origination in the Indian Subcontinent region Since 16th Century. It is popular among many countries of the region like India, Nepal, Sri Lanka, Pakistan, Bangladesh, Myanmar and middle East. It can be widely found as a street food in these countries and in Indian cuisine restaurants around the world.
INGREDIENTS:
- MILK
- SUGAR
- CASHEWS
- PISTACHIOS
- RESINS
- SAFFRON (PREFERRED)
RECIPE:
- Boil milk in a pot until thick (rabri consistency) and changes color to off white or pale yellow.
- Add sugar according to your preferred sweetness level.
- Once sugar is melted, turn off the heat and let it rest to cool down.
- Blend rabri in a blender until smooth.
- Pour half the blended rabri in a container and add some dry fruit and nuts and flowers (saffron/ rose petal)
- Now pour the remaining half and garnish with remaining dry fruits and nuts and flowers.
- Let it freeze for around 8-10 hrs.
- Serve it frozen, ENJOY.
